THANKSGIVING APPLE CINNAMON COFFEE CAKE

  • Today it’s the Secret Recipe Club reveal day.
  • I’m honored to be a part of this diverse international group of food bloggers.  In case you forgot, everyone in the Secret Recipe Club gets “assigned” a blog from which we are supposed to pick a dish to cook.  But, it’s all done in secrecy.  It isn’t until the ultimate reveal day (today) that everyone showcases the dishes and discovers who’s been their secret foodie link.  This club has provided me valuable exposure to blogs I might not otherwise encounter.
  • My November assignment was K&K  Test Kitchen. Most meaningful to me is the fact that K&K Test Kitchen started out as a collaboration between daughter, Kelsey, and mom, Kim.  The blog was created to ignite experimentation in the kitchen featuring recipes focused on quality, common ingredients.  K&K Test Kitchen is bursting with a wide variety of recipes and accompanying food photography that will please the healthiest to the most indulgent followers.

Cake Batter:
  • ¼ cup of orange juice
  • 4 eggs
  • 1 cup of canola oil
  • 3 teaspoons of baking powder
  • 3 cups flour
  • 2 cups white sugar
Layers:
  • 3 large apples, peeled and sliced ¼ “ thick ( I used Honey Crisp apples)
  • 2 tablespoons. of cinnamon and 2 Tbsp of sugar combined
Instructions:1.Preheat oven to 375 degrees.
2.Combine all the ingredients of the cake batter and mix well. This is a very sticky thick consistency.
3. Combine the 2 tbsp. of cinnamon and the 2 tbsp. of sugar for the topping.43. In a 10” tube pan, layer batter, apples and cinnamon mixture; repeating layers one or time.
4. Bake for at least 1 hour, making sure it is dry when tested.
