Sausage Crescent Rolls

Ingredients

1 lb fresh spicy ground pork sausage
1 package (8 ounce) cream cheese
2 package (8 ounces each) refrigerated crescent rolls
1 egg white, lightly beaten
1 tbsp poppy seeds

Directions


  1. Preheat oven to 350 degrees F (175 degrees C).
  2. In a medium skillet, lightly brown sausage and drain. While sausage is still hot, add cream cheese and stir until cheese is melted and mixture is creamy. Cool completely.
  3. Separate crescent rolls and arrange into two rectangles. Form log of sausage mixture lengthwise down the center of each rectangle. Fold over the long sides of dough to cover sausage log. Place on an ungreased cookie sheet, seam down. Brush with egg white and sprinkle with poppy seeds.
  4. Bake 20 minutes until crust is golden. When completely cooled, slice into one and one-half inch slices.

Chicken Rollatini

       
 

Baked chicken breasts rolled with spinach and ricotta topped with pomodoro sauce and melted mozzarella. A dish the whole family will love!Perfect for a large crowd, or to feed a hungry family. These are very filling, I served this with a big salad and I was very content with just one piece. These re-heated beautifully the next day and we were happy to enjoy them again for leftovers. Enjoy!!





Ingredients: 

  • 8 thin chicken cutlets, 3 oz each
  • 1/2 cup whole wheat Italian seasoned breadcrumbs
  • 1/4 cup grated parmesan cheese, divided
  • 6 tablespoons egg whites or egg beaters
  • 5 oz frozen spinach, squeezed dry of any liquid
  • 6 tbsp part skim ricotta cheese
  • 6 oz part skim mozzarella (I used Polly-O)
  • olive oil non-stick spray (I use my Misto)

Blueberry Pie

The women in my life never put much emphasis on cooking. There was always a hot meal on the table, but my mom and grandma’s energies were always directed more towards outdoor activities. It was a great way to grow up as a girl, but we’re sorely lacking in the “family recipe” area. I never thought much of this until I married The Hubs who is from the deep south and has a mother who is bursting with classic, hand me down, foolproof recipes that she can make from memory. It’s one of the most impressive and fascinating things for me to witness.
As I hope to learn all of my mother in law’s family recipes one day, I already have the one tried and true one memorized from my side of the family. Blueberry pie.

Here’s a little secret though, even the best blueberry pie can stand some adjusting occasionally. For this particular pie, I switched out the lemon juice and zest that my classic recipe calls for with grapefruit zest and juice. What?!?!? I know, I’m so crazy sometimes, but I had a grapefruit in my CSA box so I thought, “why the heck not?” It gave this pie an awesome tanginess that no one could exactly put their finger on.

Prosciutto, Sandwich



The addition of prosciutto in this sandwich is a perfect example of using meat as a condiment. It has so much concentrated flavor, that a little goes a long way. I load this up with arugula and balsamic (sometimes I add fresh tomatoes and shaved parmesan) and I'm one happy camper!

Sandwiches with Onions and Mushrooms


I blame my Mom, she always made the BEST steak and cheese sandwiches for dinner, and luckily I don't have to give them up and neither do you! I love this with Swiss, provolone, cheddar or even American cheese... reduced-fat of course.


Ingredients:

For the steak:

  • 1/2 lb thin cut beef round sandwich steaks
  • 1/2 large onion, sliced into rings
  • 1/2 tsp olive oil
  • 8 oz sliced mushrooms
  • 4 seconds cooking spray (I like Smart Balance)
  • garlic powder to taste
  • salt and fresh cracked pepper to taste

For the sandwich:
  • 12 oz French bread or baguette, cut into 4 pieces (see tip)
  • 4 slices reduced-fat cheese slices (I used Sargento provolone)



Directions: 



Once the steak is cooked and ready, cut bread into 4 pieces (see tip). Divide steak and mushrooms evenly between four sandwiches and place a slice of cheese on each one. Place sandwiches on a cookie sheet and heat in the oven or broiler until the cheese melts; 2 - 3 minutes, careful not to burn if using the broiler. Enjoy!!

Arugula and Shaved Parmesan on a Baguette

           

When I make a sandwich, I like using good crusty bread like a baguette or French bread, which is a perfect fat free bread option. A trick I like to do when I make a sandwich is to scoop out some of the inside of the bread, which allows me to make a larger sandwich, and it leaves room for the meat and lettuce. I personally enjoyed most  of my sandwiches dry but if you prefer adding mayo or dressing, you'll have to adjust the points. I bet horseradish mayo would be lovely on this!

I've been getting lots of emails from working folks who need help preparing quick and easy lunches on the go that don't require heating up the kitchen. I am dedicating the rest of the week to healthy sandwiches. If you have a sandwich you would like to share with everyone feel free to comment and maybe I'll post your recipe!

           

Ingredients:
  • 2.75 oz baguette or French bread
  • 2 oz lean roast beef
  • 1//2 cup baby arugula (aka rocket)
  • .25 oz shaved Parmesan
  • fresh cracked pepper




Directions:

Slice bread in half and layer with roast beef, arugula, shaved Parmesan and fresh cracked pepper.

                       The onions shrink to about half their size when the slowly cook down, and as they turn golden in color they turn sweet and delicious. They are great over burgers too, I make them with a lot less oil than he does with great results.

             

Ingredients:

  • 2 teaspoons olive oil
  • 1 large white onion, sliced into rings
  • salt and black pepper, to taste
  • 12 oz leftover garlic lovers roast beef, sliced thin
  • 8 oz whole wheat Italian or French bread, cut into 4 pieces
  • 4 oz reduced-fat Swiss Cheese or provolone

Directions:
Heat a 10-inch skillet over medium-low heat. Stir in the oil and onions, season with salt and pepper and cook until slightly brown, turning occasionally about 15 to 17 minutes.

              
Slice the bread open, place 3 oz of cooked roast beef on each piece and top with 1/4 of the caramelized onions. Top with cheese and place in the broiler for 1 to 2 minutes to melt the cheese, careful not to burn it.

Method

For the masala:Dry roast all the ingredients together in a pan for a minute.

In a mortar and pestle pound together all the ingredients.

Transfer this in the blender and make a fine paste.


For the chicken:
Marinate the chicken lollipops with turmeric, salt, red chilli powder and 2 tsp oil.

In a saucepan add a little oil and sear the lollipops from all sides till they are half cooked.

Add sugar and cook some more.


For the base:
Add refined oil in the pan followed with mustard seeds, few curry leaves and onion. Bhuno them well together.

Add the masala and chicken lollipop into the base and saute them well together.

Add tamarind extract, jaggery and water. Mix them well and cover the top.

Add little lemon. Toss well and cook till chicken is well done.

Garnish with coriander leaves.

After 1 hour of chilling, you may use your favorite cookie cutter and cut into difference shapes. At this point you can just bake the shaped cookies plain or you may add sprinkles directly onto them. I lined some cookies with circle-shaped sprinkles, as you see above and below. This did take me awhile… maybe about 6 minutes per cookie. Also took me a lot of precision and patience, but hey… they’re pretty right?! Beauty is pain.

This recipe is a must try! I recommend pairing with deep fried pickles!
Ingredients
  • 2 large chicken breasts, cut into bite-sized pieces and seasoned with salt & pepper
  • ¾ cup milk
  • ¼ cup pickle juice
  • 1 egg
  • 1-1/4 cups flour
  • 2 tbsp. powdered sugar
  • 2 tsp. salt
  • 1 tsp. pepper
  • ½ cup peanut oil, divided (or vegetable oil)
  • Honey Mustard Dipping Sauce:
  • ½ cup plain greek yogurt, optional
  • 1½ Tablespoons yellow mustard
  • 1 Tablespoon Dijon mustard
  • 2 Tablespoons honey
Instructions
  1. Whisk together egg, milk and pickle juice, and pour into a large ziplock bag or bowl.
  2. Add chicken pieces and marinate in the refrigerator for 2-4 hours.
  3. Combine flour, powdered sugar, salt and pepper in a large ziplock bag.
  4. Shake to combine.
  5. Remove chicken from the marinade and add into the bag.
  6. Shake to coat the chicken completely.
  7. Heat half the oil in a large skillet or dutch oven over medium-high heat (6 or 7 out of 10.)
  8. Test the oil by dropping in a bit of the flour mixture.
  9. If it sizzles, the oil is ready, if it pops, lower the temperature a bit.
  10. Gently place chicken pieces into the oil with tongs.
  11. Do this in 2 batches, as you don’t want to overcrowd the pan.
  12. Cook the chicken for 3-4 minutes, or until golden brown on one side.
  13. Turn the chicken over and allow to cook for 3-4 more minutes. Remove to a paper-towel lined plate.
  14. Heat the remaining oil and continue with the other half of the chicken pieces.
  15. Stir together the honey mustard dipping sauce ingredients, and serve with the hot chicken bites.

 To make today’s cookies, I used one of my favorite peanut butter cookie recipes as the base. It’s my go-to peanut butter cookie dough and have so many cookies on my website using this dough as the base.  They bake up to be so soft, puffy, unbelievably thick, and the most peanutbutteriest cookies I’ve ever tasted. In fact, one reader even told me that the cookies taste like the soft peanut butter inside of a Reese’s Peanut Butter Cup

Soft-baked, thick style peanut butter cookies topped with melty marshmallow and chocolate. Bring campfire s'mores inside!

Directions:

Using the peanut butter recipe linked above: in a large bowl, using a hand-held mixer or stand mixer with paddle attachment, cream the butter and sugars together on medium speed. Mix in the peanut butter, egg, and vanilla (in that order). Slowly mix in the baking soda and flour. Do not overmix. Chill dough for at least 30 minutes.
Preheat oven to 350 degrees. Roll 1.5 Tablespoons of dough into a ball. Place onto ungreased cookie sheet or silicone baking mat. Bake for exactly 7 minutes. Remove from oven and place marshmallow on top, gently pressing it down into the warm cookie. Place back into the oven for 2-3 more minutes so the marshmallow can melt and the cookie can finish baking.
Remove from oven and allow to cool for about 5 minutes. As the cookies cool, melt chocolate according to package directions. Spoon about teaspoons of chocolate on top of each marshmallow and swirl around with the back of the teaspoon. Top with sprinkles if desired. Cookies remain fresh at room temperature for up to 7 days in an airtight container.

This recipe is basically a freeform crusty pie. Emphasis on crusty. The buttery, flaky crust was my favorite part!  It sort of tasted like a biscuit. A fruit-filled, juicy biscuit.
Peaches are in their prime right now.  I’ve been dying to go peach picking this summer out in Westminster MD, but haven’t found the time.  If you have a peach tree outside, consider me very jealous. I love them!  Rather than using only ripe peaches for my tart, I added some color to the filling. A super sweet strawberry contrast to the pretty peaches. Isn’t she just gorgeous?!

4 cups rice, prepared
½ pound boneless, skinless chicken breasts, cooked (I recommend using slow cooker teriyaki chicken)
1 cup peas & carrots, frozen
1 white onion, chopped
2 cloves garlic, minced
2 eggs
3 tablespoons sesame oil
¼ cup soy sauce

Instructions

Prepare rice according to package instructions to yield 4 cups cooked rice.
Heat sesame oil in a large skillet on medium heat.
Add onion, garlic, peas, and carrots. Stir fry until tender.
Crack eggs into pan and scramble, mixing throughout vegetables.
Add rice, chicken, and soy sauce to pan. Stir in soy sauce and remove from heat.

Ingredients
  • 1 cup sugar
  • 1/2 cup vegetable oil
  • 1/2 cup peanut butter
  • 2 overripe bananas
  • 2 eggs
  • 1/2 cup buttermilk
  • 1 teaspoon baking soda
  • 2 cups sifted all-purpose flour
  • 15 Oreos, crushed (I use a food processor)
  • 6 Oreos, crumbled for topping (I just did this with my hands)
Instructions
  1. Preheat oven to 350°. Grease two standard sized loaf pans or 4 mini loaf pans.
  2. Mix oil, peanut butter, and sugar in a large bowl with a stand mixer whisk.
  3. Add the bananas, eggs, sour milk, and baking soda to the peanut butter mixture. Beat until combined.
  4. Slowly mix in flour, beating just until combined, don't over mix!
  5. Mix in the crushed Oreos. Divide the batter evenly between the two pans (even if it looks like the batter could all fit comfortably in one pan, don't! I've found that I can't get it to bake all the way through without burning the outside if I only use one pan).
  6. Crumble the 6 Oreos over the batter (3 Oreos for each).
  7. Bake for 30-35 minutes or until toothpick inserted comes out mostly clean (it IS a very moist bread, so you may still have a little bit of bread that sticks to the toothpick, that's ok).
  8. Let cool for at least 10 minutes in the pans before trying to slice.
